In 1999, Hervé Busset and his wife discovered a property in the heart of a verdant oasis, near Conques, which they never wanted to have to leave. In an authentic watermill, on the Way of Saint James, the couple decided to create what was to become the Moulin de Conques: a 4-star hotel with a gourmet restaurant.
Here, the Chef, Hervé Busset, gives full expression to the philosophy of a cuisine founded on nature, the local area and inventiveness. In 2007, his dedication and high-flying dishes were rewarded with a Michelin star®.
Le Moulin de Conques hotel is marked by the presence of Dominique Busset. As the manager of the establishment, the reception and administration, she shares her smiling face and hospitable character with all her guests.
Proudly committed to their profession, the couple has passed on the love of their profession to their son, Henri Busset. In turn, he, too, has devoted himself to the hotel business and, at the age of barely 20 years, is embarking on a new adventure: to turn the abandoned Château de Rodez in Rodez into a new centre of life and relaxation.
